Hear us out, it’s not as crazy as it sounds.
A tart pickle, especially one made with our Granny’s Bread and Butter pickling pouch, is the perfect counterpoint to a spicy pepperoni and many other topping combinations. Pickles are such a natural flavor addition to meats—from pork, chicken, charcuterie, and pepperoni.
Making your own pizza at home is pretty darn easy, and a lot of fun too! Just like our easy-to-make pickling pouches.
There are four basic parts of making any pizza that always stay the same.
- Crust (or dough) base
- Sauce
- Cheese
- Toppings
Starting with the “base”: you can use a store-bought pizza crust, a frozen pizza dough (which you can thaw and hand stretch), or you can make your own crust, and so many more options. For this recipe we opted for an even easier option, one that is not only simple to use, but can also be folded in half after topping it, to create a pizza/taco version.
Like the crust, sauce is also a matter of personal choice. You can buy any pizza sauce option that you prefer at your local grocery store, you can make your own, or you can even go sans sauce. We’ve even seen and played around with a mayo sauce for a good BLTP (bacon, lettuce, tomato, pickle) pizza.
In this recipe, we used a traditional pizza sauce. You can also jazz your sauce up a bit with what we refer to as a Bloody “Merry” version by adding a bit of grated horseradish, some chili powder, a splash of Worcestershire sauce, and TABASCO®. For the cheese, mozzarella is the traditional choice for pizza. Other cheeses to consider are cheddar, provolone, Monterey jack and Colby jack. In fact, you might enjoy using multiple cheeses for the visual and taste variations. All of these will melt well. Looking for a dairy free cheese option for you pizza? Many local grocery stores now sell different cheese variations that are dairy free as well.
For garnishments, you can choose any number of your favorite pizza toppings. For this recipe, we use pickles, which we encourage you to slice in ¼” thick pieces so that they bake appropriately and don’t overpower the taste profiles of the other ingredients.
The other topping that we think is a must is pepperoni, which should be arranged in equal proportions to the pickles in order to give you a bit of both flavors in each bite.
Other toppings that go very well on pizza include:
- Cooked Ground Beef
- Honey Ham
- Grilled Chicken
- Bell Peppers
- Onions (we prefer red onions)
Holiday Pickle Pizza Recipe
Ingredients:
- Flour Tortillas
- Pizza Sauce of Choice (optional)
- Shredded Cheese of Choice (we used a mix of different cheeses on one pizza, and mozzarella on the other)
- Granny’s Bread and Butter Pickles, diced into coins (Great Lakes Pickling Company)
- Garnishments of Choice (we used pepperoni, red onion, and red and green bell peppers)
Directions:
- Pre-heat your oven to 400°F
- Lightly spray your non-stick cookie sheet or baking pan with vegetable oil, then pace your flour tortillas on the sheet. This will help give you a nicely baked under-side which should be a bit crispy.
- If you want to add sauce to your pizza, use a modest amount and leave a ½” un-sauced edge.
- Add your selected cheese(s) by sprinkling it over the sauce and leaving a ½” un cheesed edge.
- Add your toppings, arranging them equally over the cheese.
- Place your finished pizza(s) in the oven and bake for approximately 10 minutes. All you’re looking for is the cheese to melt and the edges of the flour tortilla to be golden to medium brown.

These quick and easy holiday pickle pizzas can be prepared in advance, covered with plastic film, and left to be baked later. You can also set up a “buffet” assembly table and let each guest or person make their own, baking them throughout the party or get-together.
