Looking for a dip recipe that’s almost a meal in itself? One that’s a crowd pleaser, a family pleaser, and most importantly, a pickle pleasing go-to favorite?
Our Melty Buffalo Cheesy Chicken Pickle Dip is quite a mouthful.
Figuratively AND literally.
This warm/hot dip, is a spicy and savory blend of cheeses and chicken, with a bit of pickle juice tang.
Each mouthful, when topped with chopped pickles is a perfect appetizer for an afternoon on the deck or to take to a casual party or back yard get-together.
Melty Buffalo Cheesy Chicken & Pickle Dip
Makes an 7″ x 10″ Cassserole Dish
Ingredients:
- 8 ounces Cream Cheese, Room Temperature
- ½ cup Blue Cheese, Crumbled (Optional)
- 1/2 cup Mayonnaise
- 3 cups Cooked Chicken Meat (Rotisserie Chicken Works Well)
- ½ cup Frank’s® RedHot®
- 2 tbps Pickle Juice (Great Lakes Pickling Company Polish Dill or Spicy Garlic Dill)
- 4 cups Sharp Cheddar Cheese, Shredded
- 1 cup French’s Crispy Onions, Chopped
- 2 cups Great Lakes Pickling Company Pickles, Chopped
- Your Choice: Corn Tortilla Chips, Crackers, Celery Stalks
Directions:
- Heat your oven to 375°F and have a medium size casserole dish (7″x10″, 8”x 8”, or similar) and a piece of foil or lid to cover the dish.
- Microwave the cream cheese 15 seconds. In a mixing bowl, fold the cream cheese, (optional blue cheese), mayonnaise, chicken meat, hot sauce, pickle juice, and 1 cup of the shredded cheddar cheese together. Add to the casserole dish which we recommend you lightly spray with a vegetable spray first.
- Once in the dish, sprinkle the remaining 3 cups of shredded cheese evenly over the surface of the dish, cover loosely (not to touch the cheese), and bake at 375°F for approximately 25 minutes.
- After 25 minutes, remove the foil, sprinkle the crispy onions over the cheese, turn the oven temperature down to 300°F and bake another 10 minutes, or until the cheese mixture is bubbly.
- Remove from the oven and serve with a bowl of chopped pickles to top each chip, cracker or celery stalk after dipping into this deliciously cheesy appetizer dip.
NOTE: A small serving spoon is helpful to scoop this dip onto your chosen dipper.
