Melty Buffalo Cheesy Chicken & Pickle Dip

Makes an 7″ x 10″ Cassserole Dish

  • 8 ounces           Cream Cheese, Room Temperature
  • ½ cup                Blue Cheese, Crumbled (Optional)
  • 1/2 cup              Mayonnaise
  • 3 cups               Cooked Chicken Meat (Rotisserie Chicken Works Well)
  • ½ cup                Frank’s® RedHot®
  • 2 tbps                Pickle Juice (Great Lakes Pickling Company Polish Dill or Spicy Garlic Dill)
  • 4 cups               Sharp Cheddar Cheese, Shredded
  • 1 cup                 French’s Crispy Onions, Chopped
  • 2 cups               Great Lakes Pickling Company Pickles, Chopped
  • Your Choice:    Corn Tortilla Chips, Crackers, Celery Stalks

  1. Heat your oven to 375°F and have a medium size casserole dish (7″x10″, 8”x 8”, or similar) and a piece of foil or lid to cover the dish.
  2. Microwave the cream cheese 15 seconds. In a mixing bowl, fold the cream cheese, (optional blue cheese), mayonnaise, chicken meat, hot sauce, pickle juice, and 1 cup of the shredded cheddar cheese together. Add to the casserole dish which we recommend you lightly spray with a vegetable spray first.
  3. Once in the dish, sprinkle the remaining 3 cups of shredded cheese evenly over the surface of the dish, cover loosely (not to touch the cheese), and bake at 375°F for approximately 25 minutes.
  4. After 25 minutes, remove the foil, sprinkle the crispy onions over the cheese, turn the oven temperature down to 300°F and bake another 10 minutes, or until the cheese mixture is bubbly.
  5. Remove from the oven and serve with a bowl of chopped pickles to top each chip, cracker or celery stalk after dipping into this deliciously cheesy appetizer dip.

NOTE: A small serving spoon is helpful to scoop this dip onto your chosen dipper.
